In the following sections, you will find out more about how our specialty food-grade salts and unique products are used in the individual sectors and the critical factors with which they comply.

Dairy

In the dairy sector, SUPRASEL® salt is used to enhance flavor and preserve foods. For butter and margarine production, the high dissolution rate, fine and consistent particle size, excellent slurry performance and extremely high purity of our micro-fine SUPRASEL MICROZO® salt makes it the product of choice. In cheese-making, purity and the right particle-size distribution are also crucial factors. Our salt not only retards the growth of undesirable microorganisms and controls various enzyme activities, but its curing properties are essential to the very process itself. SUPRASEL® salt reduces moisture and water activity and stimulates rind molding.


Meat

SUPRASEL® salts safeguard meat products against microbial growth, enhance their flavor, stabilize color and improve texture.

Their good dissolution rate promotes coloration and prevents spot-molding. Its homogeneous particle-size distribution allows flawless mixing with nitrite (and iodine), to guarantee shelf-life. SUPRASEL® salt also increases shelf-life by slowing down the oxidation of fats and by making meat more resistant to light and higher temperatures.


Bakery

SUPRASEL® iodized salts enhance the flavor and texture of bread. Their consistent granulation strengthens and tightens gluten, making the dough harder and stickier. When of a high purity, salt effectively stabilizes yeast fermentation and allows bakers to control the development of yeast, the production of gas and the ripening of dough.

In sweet icings and fillings, salt serves as a flavor-enhancer. Our food-grade and homogeneously mixed salts are also an important carrier.

Canning/pickling

Our salts are used in canning to preserve products and enhance their flavor. The fact that they are free of calcium and magnesium helps prevent the hardening of vegetable tissue.

For some applications, coarse salt with a narrow particle-size distribution is required. SUPRASEL® Coarse is recommended for this. In pickling, salt also acts as a fermentation controller (e.g. for cucumber pickles, olives and sauerkraut).

Soups/seasoning

SUPRASEL® salt is used as both an ingredient and a carrier in soups and seasonings.

To prevent de-mixing, the salt's particle-size distribution and its ranges must be selected to match the other ingredients. SUPRASEL® Dendritic's open structure makes it the perfect carrier for natural and artificial seasonings and aromas, and so for use in herbal mélanges, soups and mixes, and improves compacting the end product. In dry-mix flavorings, the free flowing of SUPRASEL® helps prevent caking and clutter, while its optimal particle size ensures good blending and guards against discrepancies in flavor.

For special applications, the salt should have a high absorption level, good adherence and good blending possibility. Applied in bouillon blocks, salt must be blended homogeneously to prevent de-mixing and ensure compatibility with the end-product.

Spreads, dressings & sauces

In spreads, dressings and sauces, SUPRASEL® increases shelf life and acts as a taste-enhancer. For peanut butter and dressings, the fine and consistent grain size of our SUPRASEL® prevents de-mixing and is well-suited for even spreading. The free flowing quality is the key to equal dosage.

Snacks

In snacks, SUPRASEL® salt is used as a flavor-carrier and taste-enhancer. The right particle-size distribution is essential for good taste impact for savory snacks and coated nuts, while consistent quality is needed to ensure uniform adherence and rapid dissolution. The proper, fine particle size is important to prevent crumbling or cracking of coated surfaces and to prevent dust and lumps.

SUPRASEL® salts are available in various grain sizes, and because they are free flowing, they ensure equal dosaging. Any additives used do not affect the flavor. Due to its excellent surface adherence, SUPRASEL® Dendritic is perfectly suited for salting chips, peanuts and other savory snacks.

Fish

SUPRASEL® salts are used to cure, conserve, preserve and enhance the flavor of fish.

To prevent undesirable reactions and safeguard flavor, they are also free of insolubles and impurities. The constant and reliable specification ensures consistent curing.

In fish packing, SUPRASEL® coarse is used to prevent sticking and breaking, and to improve the quality and appearance of the finished product.

Beverages

SUPRASEL® salt acts as a taste-enhancer in beverages and is free of insolubles and impurities to prevent undesirable reactions and safeguard flavor. In sport drinks, our product restores the body's natural sodium levels after strenuous exercise.
